potato pancakes










heavy cream


hot sauce

preferrable a two burner stovetop cast iron seasoned grille or equivalent.

Medium grate potatoes and onions into a bowl with some fine grated carrot proportioned to your liking, easy on the onions, (4 meduim potatoes to about 1/4 cup shredded onions maybe about a tablespoon of (optional) carrot), add two eggs and mix , lightly, salt, pepper and season to taste (I prefer bit of dry rub added). Proportion ingredients as to not overpower the potatoe taste. I do not dry the shredded potatoes as the eggs will bind them.

In a mixing bowl add a small amount of heavy cream and a capfull of vinegar.Beat to stiff consistency. Hold for garnish.

Light up the grille, one side medium heat and the other side low heat. Course dice raw bacon or fatback and render some fat on the grille, (add olive oil or butter if desired, keep some diced frozen raw bacon in freezer for this purpose). Spoon pancake sized portions of the potato mixture on the grille thin or thick as you prefer, adjusting heat on the cooking side of the grille to preference for a crispy dark or light brown crust. Surround the pancakes with the bacon chunks to prevent sticking and to give the potato cakes flavor. Turn over pancakes when they start to hold together and cook as desired.

. When pancakes are almost done move to the low heat section of the grille to complete cooking. Move cooked bacon bits to the side of the grille and replenish with more bacon as needed. Finish the rest of the potato mixture moving the completed pancakes off the grill to a warm platter or someones empty plate sided with some bacon bits.

Serve the sour cream on the side and have a bottle of hot sauce available. The pancakes can be garnished in a variety of ways only limited by your imagination as long as you keep the potato taste. Can be refrigerated or frozen when completed and reheated or rebaked etc.

Preferable to potatoe chips, serve pancakes hot off the grille with some bacon bits for a hungry crew with frosted mugs of beer or pass around the vodka (for breakfast have strong coffee available), in a cool kitchen gathered around the heat of the grill for a satifing meal. Even better on an outdoor grille or fire on a cool or cold snowy day.
