Banana cocoa nibs crumb top muffins

similar to

1/2 cup shortening
1 cup sugar
Cream together,
Add 2 extra large eggs
Add about 1 cup mashed bananas
And 1 teaspoon vanilla
(tip – save over rip bananas ,less skins, in freezer for recipes like this)
In another bowl combine:
2 -1/2 cup flour
1/4 teaspoon salt
2- 1/2 teaspoon baking power
1/2 teaspoon baking soda
Add to above mixture
Add roasted cocoa nibs or chocolate chips, about 6 ounces, or by eye
add 2 tablespoon or so milk to proper consistency
Spoon batter in muffin pans.
Chop about 3 tablespoons of almonds
Combine with 1 tablespoon sugar and 1/8 teaspoon cinnamon.
Sprinkle on muffin tops.
Bake about 20 minutes at 350 Fahrenheit.

Other note:
It’s easier to enter recipe text in Notes ( app with an I pad )instead of entering
Text in the blog app. If you happen to cancel editing in some blog apps and don’t update , your text is lost. Maybe better to use the web version of your blog for some functions.




Cream shortening and sugar.


Add the dry ingredients.


Mix until blended.


Spray/grease muffin pan


Mix in roasted cocoa nibs.
Spoon into muffin cups.
Top with crumb mixture.
