Meatball and eggplant wrap

Like a calzone except a flour tortilla is filled ,wrapped  and pan baked till crisp.

The meatballs were leftovers from a party Diane went to and brought home.

The garden has supplied us with many eggplants and they continue to grow.

prep the eggplant as usual and dice, fry, add other ingredients

IMG_6008add the diced meatballs

IMG_6009

wrap and fry to brown and crisp the wrap…
