Those who follow the business news may know the the grocery business (and other household goods) is getting very competitive.

Having been ordering online for some time now, it’s good to have more than one player in the game. For some reason one of the retailers seems to switch products and it’s shipping arrangements. No longer offering shipping on products it formerly did, or requiring more of a bulk or multiple quantity of  one item.

Shipping also is competitive, most offering a free two day window (once order has been handled which may add a day) for a minimum purchase amount.

tIME FOR PIE (and bread)

A can of peaches sits on the shelve, some pie crust dough is in the fridge, 2/3 left over from a holiday recipe. Can’t think of the last time I used a canned filling but a family member brought it home with other food from a community food bank. Once I put the peaches in the pie shell, it needed more  filling of some type. Several apples were sliced and added with a light grating of ginger and turmeric root. The sweetness of the canned peaches was enough without adding more sweetness. A simple lattice top completes the bake.

OVEN TIME !

img_20190426_125740

will go about 35 minutes, probably less

Not often I use a product with genetic engineering and fructose but I guess genetic engineers need something to do if they went to school for it.

SHIELDS UP ! I had to deploy the pie shield as the outer shell casing became too dark.

Not a bad tasting pie , the apples off set the canned peach taste accented with the ground ginger and turmeric. Goes well with coffee.

BUT WAIT !

Of course I had some dough fermenting, a bit interesting with this mix, some leftover cooked potatoes  were chopped and squished incorporated into the dough with the wire whisk on the mixer. The topping was a concoction of thyme zatar on one loaf and seed blend on the other. Mixed with a bit of water, butter and flour each of the coatings was brushed on each loaf before baking.

The bread was very moist, all of the potato was incorporated into the dough. Some of the filling from the pie previously baked had dripped onto the oven floor …. I SHOULD HAVE USED TIN FOIL UNDER THE PIE. Any ways the bread was very good, my good weakness !

grille time 2019

Ahh… the warm weather approaches, and after some yard work it’s time to light up the grille under the shadow of an umbrella.. actually the second time I’ve started the charcoal this season.

Some dough that’s been fermenting, this batch with some dark spent grain barley adorns the all purpose flour. a very wet mixture, some corn flour made it more manageable.  simply pressed into rounds, then off loaded to a wooden cutting board. decided to throw on a cast iron grille over the glowing hot embers. slightly at a tilt allowing one end to be hotter than the other for some temperature differential.

Hmmm….. some roasted grilled veggies would go good on the flatbread, mainly a bunch of broccoli, with the usual onion and garlic, green onion and celery. a spot of ginger, grated turmeric, salt  and freshly ground quad blend of peppercorns.  drizzle on some oil, toss and ready for the grille pan.

After the flatbread is grilled with the requisite char on some pieces, the perforated grill pan is placed on the hot cast iron surface.

Flatbread was thick and soft but with a flavor similaer to a pumpernickel bread.

img_8077

ready to go with the veggies, start off with some bacon pieces to fat render for non stickiness.

img_8080

once a slight char is attained, drizzled on some chicken broth and cover about ten minutes depending how limp you like the veggies.

img_8081

Toss from time to time… MMMMM bacon bits !

img_8082

Now your cover becomes a warm bowl to serve the veggies.

served over the flatbread with a porter style brew…. good close for the labor of yard work.

Apple Squares

A pie that turned into a bunch of squares. I was going to go for a pie but decided to spread the whole thing on to a sheet pan. I followed the dough recipe from the Cuisinart food processor by mixing the dough as directed and before it actually comes together, placing it plastic bags and squeezing it to a disk , then refrigerate for an hour. Butter was the fat utilized.

The apples were then prepped with fresh grated cinnamon, all spice, and nutmeg with both shaved solid brown sugar and granulated brown sugar. (and a touch of grated ginger root). To provide some structure bread crumbs were added also.

The dough rolled out very easy both top and bottom.

Well, I went this far, so I added sugar and chocolate icing.

COFFEE?

shopping

It’s been since January since I last posted on this topic and there is evolution in the grocery procurement task as always. One family member shops weekly with transportation  provided by the city for a small fee. Other staple items are ordered online and delivered, for some this is a huge savings not only in labor and transportation but freeing up leisure time. As people have looked forward in the past for the latest and greatest labor and time saving devices, now picking up your smart device or logging in to the online purveyor yields the service sector  economy at your whim to provide more leisure time, a filled predication of the past. (if that’s what you accept)

BTW if you go to the  grocery store, meet the new supervisor.

Another prediction fulfillment ?
