Apple cranberry crisp

It’s fall weather time and if the cold blast prewinter weather cools you off then it’s apple crisp time.

Recipes abound, this one I like that adds the cranberries for tartness. You can cut back or eliminate the sugar with a substitute if you please.

4 apples (or whatever harvest will give you.)

1 & 1/2 cup cranberries,( I keep a few bags in the freezer)

1/3 cup sugar (or substitute)

3 tbls AP flour Or substitute

Zest (I used lemon juice)

Topping:

1/2 cup flour or equivalent (some rice flour substituted)

1/2 cup oats, either quick cook or steel cut ,your preference.

1/3 cup light brown sugar or substitute

1/4 cup almonds sliced

1/2 teaspoon cinnamon, fresh grated for me.

Pinch of salt

1/4 cup unsalted butter

Mix the first 5 ingredients in a bowl, I lined a 10 inch baking pan with aluminum foil, and added the mix.

You can rinse out and dry the bowl, add the rest of the topping ingredients, mix with a pastry blender, spread on top, bake in a 350 degree farenheit oven for about 30 – 40 minutes.

Let cool slightly, best with rich vanilla ice cream, and /or whipped cream.

tIME FOR PIE (and bread)

A can of peaches sits on the shelve, some pie crust dough is in the fridge, 2/3 left over from a holiday recipe. Can’t think of the last time I used a canned filling but a family member brought it home with other food from a community food bank. Once I put the peaches in the pie shell, it needed more  filling of some type. Several apples were sliced and added with a light grating of ginger and turmeric root. The sweetness of the canned peaches was enough without adding more sweetness. A simple lattice top completes the bake.

Not often I use a product with genetic engineering and fructose but I guess genetic engineers need something to do if they went to school for it.

Not a bad tasting pie , the apples off set the canned peach taste accented with the ground ginger and turmeric. Goes well with coffee.

BUT WAIT !

Of course I had some dough fermenting, a bit interesting with this mix, some leftover cooked potatoes  were chopped and squished incorporated into the dough with the wire whisk on the mixer. The topping was a concoction of thyme zatar on one loaf and seed blend on the other. Mixed with a bit of water, butter and flour each of the coatings was brushed on each loaf before baking.

The bread was very moist, all of the potato was incorporated into the dough. Some of the filling from the pie previously baked had dripped onto the oven floor …. I SHOULD HAVE USED TIN FOIL UNDER THE PIE. Any ways the bread was very good, my good weakness !

Apple Squares

A pie that turned into a bunch of squares. I was going to go for a pie but decided to spread the whole thing on to a sheet pan. I followed the dough recipe from the Cuisinart food processor by mixing the dough as directed and before it actually comes together, placing it plastic bags and squeezing it to a disk , then refrigerate for an hour. Butter was the fat utilized.

The apples were then prepped with fresh grated cinnamon, all spice,and nutmeg with both shaved solid brown sugar and granulated brown sugar. (and a touch of grated ginger root). To provide some structure bread crumbs were added also.

The dough rolled out very easy both top and bottom.

fruit pizza tart strips

by using your favorite recipe for yeast dough, don’t be limited to the traditional pizza topping

press out the dough on parchment and use granulated sugar sprinkled on the paper to give the bottom crust color and crunch when baking.

add your favorite fruit topping, this recipe is very sweet, I’ll post it in a future posting.

It’s a combination of apples, raisins and cranberries

Bake in a moderate hot oven about 380 degrees

Carefully remove from the parchment, let cool and slice. Easy cleanup when using syrupy type ingredients

When cool, the topping congeals, nice snacks for the day or wrap in parchment and give away to friends and family.

Getting close to peak foliage, fresh produce available in the city farmers market, coffee and donuts/baked goods  available  for breakfast while you shop on a cool, quickly warming morning.

Fruit Crisp

A recipe adapted from America’s Test Kitchen (2001/2015), Apple Crisp .

I call it the crust less crumb top apple pie. Any other suitable fruit can be used.

In addition, cardamom , allspice and cloves (ground) was added (to taste) to the topping ingredients.

Also  the quantity of ingredients of the topping, ( less the butter) is doubled and 1/2 reserved for later use.

1 and 1\ 2 cup all purpose flour

6 oz pecans, chopped fine

1 and 1/2 cups oats

1 cup light brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground cardamom

Ground all spice to taste

Ground cloves to taste

1 teaspoon salt you may lessen if using salted butter.

Divide and Reserve 1/2 of the above for later use, it is easy to store in a baggie or mason jar  and will quicken future recipes.

Cut in to the remaining 1/2 , 1 stick butter ( unsalted )

The filling : I’m using a combo of 4131 Fuji and 4130 Cripps Pink, about 3 of each variety

Less the apple cider, (none available) the apples were cooked partly in a skillet with butter, there was plenty of juice released from the apples.

Sprinkle the partially cooked apples  with the topping,  if the butter wasn’t cut in, just cut the stick of butter in small pieces and dot the surface of the topping.

This is done in the same pan, naturally.

A hot oven at 450 degrees Fahrenheit,  will crisp up the topping and finish cooking the apples.

Remove and cool  after about 45 minute total cooking time.

Scoop portions of the fruit crisp to plate, serve plain or garnish with ice cream, drizzled chocolate etc.

Apple crisp

Ahhhh…….

apple  🍎 season and the apple crisp/fruit recipes abound…

other than outright making apple pie,

so here’s one:

oven at 375 …✔︎

► grease up a 8 inch square pan

✔︎ the following

☐3/4 cup brown sugar

☐1/2 cup flour

☐1 teaspoon cinnamon , ground, fresh if possible

☐1/2 teaspoon nutmeg, ground, fresh if possible

☐1/2  teaspoon ginger root , ground,  fresh grated preferred

▶︎ combine the above in a bowl and cut in :

☐6 tablespoons butter,

if unsalted: then add  ☐ 1/4 teaspoon salt

► prepare  ☐ 4-5 apples,

mine was a mix of Greening and Macintosh.

if you have on of these machines , it makes life easy. It goes into the dishwasher to clean. (remove wood from handle)

▶︎ place the apples in the greased pan, separate into slices of course, add the topping mixture….

► bake at 375 degrees Fahrenheit, about 30 minutes…

Sunday Drive

The weather isn’t really cold yet.

Apple picking IMHO is better done in sweater weather, but, if the orchids call, fresh pressed cider to confirm the beginning of fall is flowing.

A Rhode trip to the northern part of the state. The foliage is just barely starting to turn not ready for the hard core leaf peepers yet.

If the orchid also has bakery treats, then all the better for the family sweet tooth(s).

Not only do you have your choice of apples, but your choice of the many orchids that have apples/fruits available.

The best apple cider taste, full body and mouth feel, deep red brown color.

As the saying goes, once you taste this cider you’ll have a standard to judge all other ciders.
