CARD NIGHT : CANASTA

OUR VERY GOOD FRIENDS MADE THIN CRUST PIZZA FROM THE GRILLE, ADDED THE PICKLED JALAPENOS MY WIFE MADE FOR AROMATIC HEAT EVEN THOUGH WE ARE IN A HEAT WAVE SUMMERTIME CLIMATE SHELTERING IN AIR CONDITIONED SPACES

THE CARDS ARE DEALT ………………… IT’S GUYS VS GALS TEAMS (MARKERS ARE TO SIGNIFY WHO PICKED UP FROM THE DISCARD PILE FIRST TIME WITH A NATURAL PAIR) HOUSE RULES : GAME TO 5000, NO MELDING OF BLACK 3’S

INTERMISSION… CAKE TIME, NOT BAD, GOOD TO TRY DIFFERENT RECIPES. IT’S BASICALLY A POUND TYPE CAKE RECIPE WITH A PISTACHIO GLAZE. THAT’S IT FOLKS

swedish cardamon rusk ,norwegian tea cakes

 

I like cookies, but love the flavor of crisp rusk and tea cakes, similar to twice baked dried cookie like biscotti. Not as sweet as the chocolate chip cookie is, but superior is the texture and flavor of the crispy cakes  as far as I’m concerned.

Two recipes here that were baked more than once during the Holiday season !

My recipe, I like the ginger and cinnamon addition

from recipe reminiscing

Norwegian Christmas tea cakes

  • 4 eggs
  • 125 grams sugar 4.5oz
  • 25 butter 1 oz
  • 450 grams sifted flour 16oz
  • 1.5 teaspoon baking powder
  • 1 teaspoon cardamon
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger, ground
  • 50 grams almounds finelt chopped 2 oz
  • 2 tablespoon nib sugar

……perhaps a bit over baked but the crisp edges are OK to me!

Autumn Apples with Cream

Even though apples are mostly available year round, fall is the time for apple recipes that highlight different types of apples. Cortland and Macintosh used here.

Core and section 2 apples. I’ve cut the sections in half that resulted from the core/cutter use.

In your favorite saute pan, start the apples cooking over medium high heat.

Add some butter and a few cardamom seeds…..

 

sprinkle the bubbling mixture with brown sugar, cinnamon and a splash of orange blossom water if available.

 

cook and stir the apples till they are finished to your liking.

Serve the apples with a topping of frozen vanilla cream , ice cream, or even just pour over heavy cream.

 

Let the frozen cream melt into the apples and enjoy !

(a bit of granola topping would be a good addition)
