3 bean chili with smoked chicken

It started out as a quick search on the Instant Pot app for chili, Have plenty of dried beans in stock, a quick pressure cooker meal means I didn’t have a long soaking and boiling process ahead for a meal within an hour. I found a recipe for a 3 bean chili jar recipe. Remember when the jar recipes were all the rage for gifts ! Still easy to do for your own meal kits.

Pinto, white and black beans, like maybe a 1/4 cup each ,a can of chopped tomatoes, some tomato paste and a bit over leftover condensed tomato soup. The spice list was long, cumin seeds, coriander, dried hot peppers just to name a few. Chopped onions and garlic, celery and carrot to round out the flavor and a toss of frozen corn . Saute as usual add all else. Top off with veggie stock. Seal, set and be back later.

a glass of dark home brew, next time a real light or a lime hard seltzer would be better fro contrast, or possibly a fruit shandy . The chili and the smoked chicken was fantastic.

Peasant’s plate

Some black eyed peas prepared from the previous day.

Bacon, onion, garlic, brocolli , mushrooms. 

Prepare and combine with flour, oil, butter, stock, milk.

Heat through adding grated cheese along the way.

Season as required.

Red Bean Taco

The filling for these tacos was a loosely followed recipe for re-fried beans from Bon appetite.
Sauté a smoked ham hock in a bit of oil, add onion and garlic and continue for about 8 minutes.
Add a dried red  (hot) pepper and 1/2 teaspoon ground cumin for about 1 minute.
Place in a crock pot with 1 and 1/2 cups raw , not soaked , red beans and 4 cups water.

Let this concoction cook on low overnight at least, till the beans are soft, but not mushy and the ham hock meat falls from from the bone.

Let cool and place in a mason jar and store refrigerated. The beans have many uses as a dip , spread etc.

With a combination of masa harina and white flour water, salt and a tortilla press …

Ground Beef with Egg and Cheese

  Toasted  bread , Red leaf lettuce, beef chuck, ground, with a bit of bacon fat added, broiled, medium rare about 3 ounces, topped with fried egg, cheddar cheese, and hot sauce on .

Broiled Brussels sprouts. Salt & ground pepper.

Bread slices with egg , sausages and cheese, broiled.

Greens dressed with balsamic , oil and garlic.
