3 bean chili with smoked chicken

It started out as a quick search on the Instant Pot app for chili, Have plenty of dried beans in stock, a quick pressure cooker meal means I didn’t have a long soaking and boiling process ahead for a meal within an hour. I found a recipe for a 3 bean chili jar recipe. Remember when the jar recipes were all the rage for gifts ! Still easy to do for your own meal kits.

Pinto, white and black beans, like maybe a 1/4 cup each ,a can of chopped tomatoes, some tomato paste and a bit over leftover condensed tomato soup. The spice list was long, cumin seeds, coriander, dried hot peppers just to name a few. Chopped onions and garlic, celery and carrot to round out the flavor and a toss of frozen corn . Saute as usual add all else. Top off with veggie stock. Seal, set and be back later.

start the plate with a layer of smoked chicken thighs

top with shredded cheese and chips,

a glass of dark home brew, next time a real light or a lime hard seltzer would be better fro contrast, or possibly a fruit shandy . The chili and the smoked chicken was fantastic.

meatball enchilada

left over meatballs, mind you, a ground chicken blend with sauce already a bit spicy from my heavy hand on the red pepper flakes.  Pasta, noodles, gnocchi  ??  Take two, Wraps ! going towards the Mexican style.

Step one make some white floured tortillas , cook in the trusty cast iron skillet with a touch of oil brushed on. (I won’t bore you with the recipe for flour tortillas, a bit of bacon fat mixed into white flour and water is all it takes)

there is something about having a tortilla (or flatbread) puff up like this, a sign of good luck?

chop or slice the aforementioned meatballs

keep it simple with a few ingredients like shredded mozzarella, finely processed broccoli, meatballs and sauce. 

lay down some sauce, meatballs, broccoli and cheese

roll up, closely nestle in a pan, a bit of oil in the pan before placement

top with sauce, cheese and broccoli, I don,t go wild with the sauce like traditional enchiladas, I like the wraps with a bit of crunch and the ability to be eaten like a wrap.

bake the babies till heated through, cheese melted, crunchy edges, flame them under the broiler if desired.

Always seem to have a batch of dough around.

Ready for the burgers.

Three with onion and cheese one just cheese.

Does the stove need to be leveled? Melting the cheese !

Order is up !

Getting close to peak foliage, fresh produce available in the city farmers market, coffee and donuts/baked goods  available  for breakfast while you shop on a cool, quickly warming morning.

Fruit from other farms in the North along with fresh baked goods!

Potatoe skins

An  appetizer, pub, bar, resturant or on your own table.  Several potatoes, scrubbed, and cut . Under the broiler till browned and finished to your liking then add some toppings. Cheese being most popular.

Memorial Day Cheeseburger 

Photos from Memorial Day, other than memorial events, the traditional day to open a swimming pool, celebrate the beginning of summer, or grille.

Not having really any menu plans I just grilled the burgers quick, just by placing them on a grate over the charcoal starter for a quick grille.

green peppers stuffed with broccoli and rice.

Usually stuffed peppers contain some sort of meat, this time a cheesy rice with broccoli filling was used.

Prep the broccoli (and garlic ! of course)

I chose to steam instead of saute.

I usually zap the peppers in the microwave a bit to soften them up.

cut off the top and remove the seeds and ribs (but you knew that!)

as you would prepare some rice, use stock instead water for a kick of flavor.

Prepare a bechamel sauce (butter and flour with milk or for a rich sauce evaporated milk), seasoned as you would prefer.

add the broccoli mixture to the sauce.

mix in the rice

Add some grated cheese, in this case Parmesan to complete the stuffing.

in a baking dish big enough for the peppers, fill the peppers carefully and put them in the dish.

need some bread crumbs ? I chopped up some pretzels for the topping

Into the oven they go ….

run up the broiler after the peppers are hot and bubbly to get the brown crunchy top.

Providence , Red Fin Crudo

Tapas, small portions to pass around your table, along with a glass of wine, or cocktail. The menu, a short four page listing, additions from the web posted version, back of the house seating is close to the kitchen so your food won’t be left waiting.

The Red Fin website and Yelp reviews showcases much of the food, but of course tasting the dishes is believing.

A change from the traditional restaurant fare for me.
