Pesto: Basil ,Chive and Garlic

A simple blend of what I have on hand:

  • Fresh Basil
  • Lemongrass
  • Fresh Chive
  • Garlic
  • Olive Oil
  • Tri Blend Peppercorns , White, Black and Szechuan
  • Walnuts

A Pesto need not be a strict list of certain ingredients. Blend to your specific taste. Try different additions for tasting ingredients.

This makes a good substitute for butter on toast or bread. Cheese can also be grated on top. Thinned with oil and vinegar a dressing for greens, tomatoes etc. A dipping sauce, a pasta sauce, I enjoy this when the fresh ingredients are available. Blended in a food processor or an unplugged version could be made in a mortar and pestle. I usually drizzle the oil in at the end after the fresh ingredients have been blended.

Eggs and Polenta

something different on the breakfast plate , polenta.

Very easy to make , simply stir the corn flour/meal into boiling water, cook for about 5 minutes.

Place the mixture in a greased bread pan, let cool and refrigerate, the mixture will gel.

Similar to cornbread, but more gelatinous, slice the polenta, bake slightly and broil and/or fry, with olive oil.

If desired, make a sauce, veggie and re-hydrated mushrooms were available.

The ingredients for the polenta: Colavita instant  Polenta Cornmeal Mix.

100% pre-cooked corn flour, 100% Gluten free

Herbed butter

My herbs are going wild, the cool weather and in the kratky system , spent one night in from the cold , now with the return of mild (relatively speaking) weather they are back out doors. The basil and the chives grow just as fast as we use them. Oregano in the DWC bubbler system gets harvested from time to time.

Just chop , mix with butter , and leave available for use. 

  
  
  
  
Made this before with garlic, left the garlic out this time. 

A good spread on toast , would be even better on garlic bread, or added to sautéed food.

Bacon potatoe hash with gravy

A few diced potatoes slightly microwaved, then  fried with  bacon, onion , green, and a light amount of  hot pepper. A veggie broth, cream sauce gravy to plate.

gnocchi and sausage

IMG_8874Second batch, better results with this gnocchi  dough recipe made with leftover cold mashed potatoes.

Easy to make on demand.

These gnocchi have chives in them.

Morning plate

Gnocchi , poached egg, fried ground linguica.

My gnocchi leftover dough is a little to soft, should have added a bit more flour, none the less, an alternative to toast and the linguica rounds out the flavor of the dish.

  

Coffee, 8 o’clock whole bean , a mix of Colombian and arabica coffee, Columbian Peaks.

breakfast burrito

Similar to breakfast tortilla previously posted.

A few ingredients , some from the garden.

Sauteed onion, garlic peppers and diced tomato with seasonings, oregano etc.

Reserve and drain if necessary.

Make an omelet

With a flour tortilla, cut the omelet to fit the tortilla and spoon in the sauteed mixture. Didn’t make my own tortillas, my wife likes these from the warehouse club.

Fold up or roll the tortilla , place in fry pan with a weight or a press atop and cook until browned. Flip and repeat.

Garnish etc.

Chicken with garlic and oregano sauce

Now that fresh oregano is available from the garden, it would compliment some thin sliced chicken breast, coated in seasoned flour and fried in a minimal amount of oil. (Thin sliced fish fillets could also be used)
Bacon greased was used sparingly , first to sauté the garlic and oregano with some butter. A bit of flour was added, not to make a thick sauce just to give it some flavor and body, cooked till the floury taste subsides.
After the chicken breast are finished , the sauce was strained , and poured over the plated chicken. Garlic crisps can be used as garnish.

Sliced potatoes quickly cooked in the fry pan and served with chopped chives served as a side.

Herb and garlic flatbread

All of the herbs that were purchased this year were replanted into containers. By now there is enough growth to trim for the kitchen.

Chives
Basil
Thyme
Oregano
With the addition of diced garlic.
Added to a recipe of dough for flat bread.
