cooking with coconut milk (chicken)

One of the ingredients I’ve been slowly  incorporating into recipes is coconut milk. From Thai grilled shrimp to this,  it uses some similar elements for a different take on chicken. As the story goes there are probably more ways to cook chicken than anything else.

First step, thawing out and thin slicing some boneless chicken breast, many in the freezer at this time.

Next using Thai spice paste, rub the chicken and stack the fillets, let stand for about an hour, I find that this is a quick acting spice paste so a meal can be prepared with a shorter lead time than an overnight marinate.

Free hand a spice pallet, here cinnamon, fenugreek, allspice, peppercorns, ground hot smoked pepper, whole peppercorns and the like. One of my attempts at assembling a combination. Researching some recipes revels that the ingredients are often dictated by what was locally grown and available at the time even depending on the weather and harvest conditions and may be influenced by religion. Heat a small amount of oil and flash or sputter the spices quickly, add the sliced onions ,sliced lemongrass and a bit of water to prevent burning.

Cook the onion and spice mixture several minutes , add water along the way if necessary till translucent. remove to a plate.

Yes the breast are huge!  This was slicing from only one piece.  When all are browned, return to the pan.

Add the coconut milk, grated turmeric and ginger and several tomatoes along with the previously cooked onions and lemon grass.

Mix slightly, cover and simmer till heated through. Taste and adjust spices. I was surprised ! The coconut milk evened out all the spices, taste was more than I expected even a bit of heat with the sweetness of the coconut milk.

plated it up with rice and cool cucumbers.

The chicken was fork tender, not overcooked. A pleasant alternative to conventional chicken gravy,  a lighter sweeter taste.

barbecue Satay

  • 2 pounds pork loin, cut into strips (or chicken)
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1/2 cup soy sauce
  • 1/4 cup lime juice
  • 3 tablespoon molasses
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 2 tablespoons grated ginger root
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon black pepper
  • Place wooden skewers in a pan and cover with water to cover and let soak about an hour to prevent the skewers from burning during grilling. You could skip this step and broil the pork on a broiling pan instead.

IMG_3728Combine the water and brown sugar in a pan and over medium heat, simmer till the sugar dissolves increase the heat till the mixture reduces to a syrup.

IMG_3729Remove from the heat and add in soy sauce, lime juice, molasses, onion, garlic, ginger root, coriander and pepper, mix until well combined.

Marinade the pork in the sauce reserving about 1/4 cup for basting. Refrigerate for about one hour.

Thread the pork onto the skewers, grill untill tender or broil without the skewers till tender.

Served with couscous and large leaf lettuce.

Egg and sausage

A food processor makes a quick task of making sausage meat, a bit of pork diced to facilitate chopping then add spices of what you like. I added some bacon for the fat content and other  spices and herbs. Stored in a plastic bag refrigerated at least overnight gives me fresh sausage meat to use in recipes or alone as a patty.

Meat n’ Wheat

Bread has been a passion, the home baked variations are many. The succulent taste of meat combined with bread is a flavor perhaps learned from the humble hamburger. I have thought of the best recipe to combine the meat with bread, Beef Wellington,  Empanadas  and the likes, even considering baking bread with ground beef in the dough. But for me the real deal was not bread but wheat, cooked to absorbed the juices of the particular meat chosen and at the top of my scale is lamb. So this is the  recipe, adaptable to other flavors.

In a suitable pan for cooking the meal brown the meat, here , lamb loin chops. Salt and cracked  pepper of course.

Set the meat aside keeping the  the juices rendered during the browning process in the pan.

The magic ingredient here is Bulgar.

Saute up the root vegetables then add the tomatoes, here onion ,shallots and garlic are used. As to your liking herbs and spices, I used a smattering of cinnamon and just a few coriander seeds for small burst of flavors.

Add the Bulgar to absorb the juices now in the pan, and cook for several minutes. I added sesame seeds, a frequently used staple in cooking and baking . Not toasted in this recipe.

Return the meat to the pan atop the Bulgar.

Add liquid, stock is preferred, roughly twice as much by measure as the amount of wheat. If stock is not hot, bring pan to a boil first.

Cover and simmer or place  into a hot oven if you like, about 20 minutes, remove from heat and let rest covered a few minutes.

The finished result is tender meat surrounded by a most favorable wheat mixture.
