MANCHURIAN CHICKEN WITH RADIATORS

Wow ! it’s been some time gone by till posting a recipe, not that I have stopped cooking, just nothing new lately, have to change that and expand my recipe repertoire.

One breast just about 300 grams. Didn’t adjust the marination. 1 cup macaroni. Cut back about 1/2 with the sauce ingredients. Serves 2

makes a pleasant dish, by ingredient amounts somewhat spicy, adjust to taste .

Once prepped, it’s a fast cook.

Ingredients for Chicken Marination:
Chicken boneless (cube cut) 500 g
Egg 1
Corn flour 2 tbsp ( cornstarch)
Soy sauce 2 tbsp
Black pepper powder 1/2 tsp
Salt 1/2 tsp
Oil 1 tbsp
Oil (for frying) as required

Ingredients for boiling Macaroni:
Macaroni 2 cups (1 cup)
Oil 1 tbsp
Salt 1 tsp
Water as required

Ingredients for Manchurian Sauce:
Oil 2 tbsp
Garlic (chopped) 1 tbsp (substituted garlic powder)
Ketchup 1 cup
Red chili flakes 2 tbsp (you may want to adjust this less)
Soy sauce 2 tbsp
Worcestershire sauce 1 tbsp
Salt to taste
Water 1 cup
Chili sauce 2 tbsp (I used hot sauce, again you may want to adjust this to taste)
White pepper powder 1 tsp
Sugar 1 tbsp
Capsicum (small cubes) 1 cup
Carrot (small cubes) 1 cup
Onion (small cubes) 1 cup

Ingredients for Assembling:
Cooked chicken as required
Boiled macaroni
Manchurian sauce
Green onion (Chopped) as required

Directions for Chicken Marination:
1. In a bowl add chicken, egg, corn flour, black pepper, soy sauce, salt, oil and mix well. Let it rest for 15-20 minutes.
2. In a wok ( or fry pan) heat oil and add marinated chicken, fry it fully cooked and golden brown in color. Set aside.
Directions for Macaroni Boiling:
3. In a pot heat water and bring it to boil, add oil, salt and macaroni. Boil until macaroni is 80% cooked. Strain and set aside.
Directions for Manchurian Sauce Preparation:
4. In a pan heat oil and add garlic, saute for 1 minute. Now add ketchup, red chili flakes, soy sauce, Worcestershire sauce, salt, white pepper powder, chili sauce, sugar and cook for 2-3 minutes. Now add water ( here you can thin the sauce with the macaroni water ) and cook until sauce thickens.
5. Now add capsicum, carrot, onion and cook for 1-2 minutes.
6. Now add cooked chicken, boiled macaroni and mix well. Cook until chicken is well coated in sauce. Adjust if necessary with the addition of more of the macaroni water.
7. Sprinkle green onion on top and serve.
Preparation time: 10-15 mins
Cooking time: 25-30 mins
Serving: 3-4

Prepared ingredients, I use shredded carrots ( usually shred a pound or 2 of carrots and store them in the fridge so carrot can easily be incorporated into many recipes)

Starting the frying process of the chicken, I use quad blend pepper freshly ground.

remove from the pan
boil up the sauce
Add the prepared veggies, mix in and heat, don’t over cook , leave some crunch

Add the chicken and the macaroni to the pan, heat through
mix and heat thoroughly

MMMMMMMM………… plate up and garnish with some chopped green scallions

green red bean chili

A few additions of greens to this chili:

1 can of tomatoes the 28 ounce variety

ground beef, pork or whatever , amount to suit taste

mushrooms

greens :broccoli , kale, bell peppers, what have you

onion

garlic

paprika and/or other seasonings

heat: Serrano

Red beans, soaked at least overnight and then par boiled till slightly firm.

green peppers stuffed with broccoli and rice.

Usually stuffed peppers contain some sort of meat, this time a cheesy rice with broccoli filling was used.

Prep the broccoli (and garlic ! of course)

I chose to steam instead of saute.

I usually zap the peppers in the microwave a bit to soften them up.

cut off the top and remove the seeds and ribs (but you knew that!)

as you would prepare some rice, use stock instead water for a kick of flavor.

Prepare a bechamel sauce (butter and flour with milk or for a rich sauce evaporated milk), seasoned as you would prefer.

add the broccoli mixture to the sauce.

mix in the rice

Add some grated cheese, in this case Parmesan to complete the stuffing.

in a baking dish big enough for the peppers, fill the peppers carefully and put them in the dish.

need some bread crumbs ? I chopped up some pretzels for the topping

Into the oven they go ….

run up the broiler after the peppers are hot and bubbly to get the brown crunchy top.

Pizza toast

Instead of preparing another batch of dough, making use of bread already baked.

Lightly toasted white bread that has a small addition of spent stout grains, topped with sausage, green peppers, mushrooms, tomatoes and cheese. Of course a sprinkle of dried hot peppers.

The sausage, green peppers and mushrooms were sautéed, added to the toast, broiled and then add tomatoe and cheese, several  seconds under to broiler to finish.

Sprinkle with grated cheese , garnish with basil.

Bacon potatoe hash with gravy

A few diced potatoes slightly microwaved, then  fried with  bacon, onion , green, and a light amount of  hot pepper. A veggie broth, cream sauce gravy to plate.

Green pepper and onion pizza

With the temperatures starting to cool off , running the oven is more bearable.

Green peppers from the garden along with onion,basil, garlic, salt and pepper and a bit of Parmesan.

Dough is a Hodgson  Mill wheat  flour poolish with added white flour.

Roasted eggplant with veggies

What’s the easier way to prepare eggplant, other than grilling it ? just bake it !

Veggies prepped , place on a parchment lined sheet pan… eggplant, sliced, green peppers, julienne carrot and turmeric, sweet onions, dried tomato, salt and pepper. Toss  the veggies with olive oil, and brush the sliced, prepped (salted, pressed and rinsed) eggplant with olive oil.

meatball sandwich

Recently, I cooked up a batch of tomato sauce, then later made a small batch of meatballs separately. Either I have small amount of pasta with sauce and meatballs, or I use the sauce  in different recipes.

The tomato sauce is made with a Mirpoix  base to incorporate some veggies into the mix. One can diced tomatoes, one can crushed tomatoes, one can tomato soup, one can tomato paste. Add red wine and stock. Similar to a previous post  Meat Balls and Tomato Sauce.

Slice some homemade or high quality bread and place in a 400 degree oven. A few mushrooms rescued from the fridge with olive oil in another tray and place in the oven.

Slice the meatballs, or some people mash them, I like them chunky. I also added some prepared green peppers.

(To prepare the green peppers, on a gas stove, works best, directly over the burner, char the exterior of the peppers to blacken, over the open flame. Place the charred peppers directly in a brown paper bag or enclosed container. Continue with each pepper till completed and go find something to do as the peppers cool. Remove the peppers from the bag. Cut out the stems and scrape the blackened charred skin from the peppers, severing the peppers into quarters and scrape the interior of ribs and seeds. You now have peppers steaks, so to speak. Containerize with olive oil for use. Don’t forget the classic pepper and egg sandwich sandwich! The peppers are good even fried in olive oil as a side dish.)

When the mushrooms are cooked and the bread crusty, remove from the oven. Add a layer of tomato sauce, IMG_8276Then the meatballs, green peppers, sauce  and mushrooms. Top with cheese(s).

Return to the oven and heat and or broil you desired doneness.
