meatball enchilada

left over meatballs, mind you, a ground chicken blend with sauce already a bit spicy from my heavy hand on the red pepper flakes.  Pasta, noodles, gnocchi  ??  Take two, Wraps ! going towards the Mexican style.

Step one make some white floured tortillas , cook in the trusty cast iron skillet with a touch of oil brushed on. (I won’t bore you with the recipe for flour tortillas, a bit of bacon fat mixed into white flour and water is all it takes)

there is something about having a tortilla (or flatbread) puff up like this, a sign of good luck?

chop or slice the aforementioned meatballs

keep it simple with a few ingredients like shredded mozzarella, finely processed broccoli, meatballs and sauce. 

lay down some sauce, meatballs, broccoli and cheese

roll up, closely nestle in a pan, a bit of oil in the pan before placement

top with sauce, cheese and broccoli, I don,t go wild with the sauce like traditional enchiladas, I like the wraps with a bit of crunch and the ability to be eaten like a wrap.

bake the babies till heated through, cheese melted, crunchy edges, flame them under the broiler if desired.

Couscous salad with walnuts and mozzarella

Salad, anyway you make it, a fresh mixture of greens and vegetables, this one filling with the addition of couscous, sort of like a pasta salad. I made 1/2 the recipe, the full recipe serves 10, I devoured the half recipe for a full course meal. (the orginal recipe calls for feta cheese but mozzarella is what was available.

Boil some water for the couscous and your done with cooking this meal!

tear up some leafy lettuce

add all the salad ingriedents in a large bowl

Whip up the dressing

add the cooked couscous and lightly toss the salad with the dressing or drizzle per serving, add the cheese

Now I’ve made this twice, with addition of rye bread croutons. (and I sneaked in a bit of smoked dried hot red pepper into the dressing)

brocolli baked stuffed tortillas

Basically a broccoli pie but instead of a typical yeast dough, just  flour , (with a bit of bacon fat rubbed in), and water with pinch of salt. similar to a pie crust.  I started with about a cup of flour.

roll out the dough into separate circles.

IMG_5469Make a mixture of broccoli, (diced) onion, garlic, etc.(stir fry quick),cool, then add some shredded mozzarella too !

Sausage would also be a excellent addition.

Carefully, fold over the dough to meet edges, tuck and form into balls, then flatten slightly on  lined sheet pan.

Bake till crispy.

chicken parm

Some recipes just have Parmesan cheese but mozzarella is also used.

kinda of a version that was on Cooks Country.

OK your supposed to have bread crumbs which I don’t have so slice and chop bread in processor.

Spent grain bread fro the crumbs.

IMG_5342since the crumbs are fresh, I’ll toast them in a fry pan.

very toasty ,perhaps a bit more than needed , the spent grain bread give very crunchy crumbs.IMG_5343Add an amount of grated cheese, parm that is ,and seasonings if desired to the crumbs.

Set up pans/bowls with beaten eggs, and crumbs close to fry pan, typical bread coating setup for frying.

transfer the chicken breast to a baking pan , apply some tomato sauce and mozzarella, broil till melted.

The chicken is not cooked in the sauce for maximum crunch.
