not exactly a light muffin, the apples have a lot of moisture , but I needed some chocolate and fruit for dessert.

Soured blueberry corn muffins

A typical corn muffin recipe, instead of  only milk for one of the wet ingredients, the addition of a sour dough starter.img_1203

1 cup white flour

1 cup yellow cornmeal

1 teaspoon salt

1/4 cup sugar

3 teaspoons baking powder

Scant 1 cup sour dough starter

1/4 cup Melted butter

1 egg beaten

Milk, as necessary , if batter is too stiff

Added 3.5 ounce bag of dried blueberries

……………………………………..

Standard wet and dry ingredient mix, combine each first then mix together.

The sweetness of the blueberries stands  out from the slight sourness of the cornbread.

Banana chocolate cake

Bananas,a staple of our diet but  when they ripen faster than you can eat them,  into the freezer they go. I happen to come across this recipe for chocolate banana bread (and muffins)  that fit the bill with the exception of buttermilk, which I substituted milk with a bit of vinegar to sour it. So the frozen overripe bananas, now defrosted can be utilized.

Chocolate-chunk loaf and muffins

basically a cake recipe that makes a lot of batter enough for 12 muffins and 1 loaf, good for lunch box.

    no pictures as of  yet of the finished products, they rose just fine and had a semi light  texture.

(another use for overripe bananas is that they can be mashed and served with other overripe fruits or utilized in a smoothie.

Cranberry Muffins

Dry ingredients: 1 and 3/4 cups of flour
3/4 cup sugar
2 and 1/2 teaspoons baking powder
3/4 teaspoon salt

Wet Ingredients: 1 egg
3/4 cup milk

Other: 1/3 cup of vegetable shortening.
Additions: 1 cup cranberries.

A typical basic muffin recipe made with the addition of cranberries .
Start mixing the dry ingredients: flour, sugar, baking powder and salt.
In a small bowl mix the wet ingredients: egg and milk.
With a pastry blender, cut in about 1/3 cup shortening to the dry ingredients.
Place about 1 cup of cranberries in a small bowl and add sugar to taste, crush slightly.

Make a well in the center of the dry ingredients and add the wet ingredients, mix gently.
Fold in the crushed cranberries.

Spoon into a 12,or 2×6 section , greased muffin pan(s).

Crumpets

When is an English Muffin NOT an English muffin? Properly call it a Crumpet !

Today’s cooking assignment: Crumpets, I’ll leave the tea selection up to you but the theme here is Afternoon Tea and Crumpets. (I wonder why ? )

Me, I had morning coffee and wanted something fresh in the line of bread dough etc. After the caffeine kicked in it was griddle cakes  inspired by Betty Crocker International Cookbook recipe “Crumpets” (page 280,1980 General Mills) referred to also as “Pikelets”.

Get out the griddle, or cast iron fry pan.

Dissolve yeast with warm water in a large bowl,

let sit a couple of minutes till bubbly.IMG_1871

Add sugar,IMG_1869 salt, IMG_1870 flour,IMG_1873 scalded milk, then cooled, and  butter. IMG_1868

IMG_1874  also 2 eggs,IMG_1875mix all to make a yeasty batter.

Let the batter sit till it doubles and is frothy.  IMG_1877

now, fire up the griddle with a ring, use can use the old tuna can trick, I have a hamburger ring that I use.

IMG_1879 IMG_1882 IMG_1883 once they set, remove ring, cook and flip till done

IMG_1884 you can gently pull them apart, if you like, and eat them with jam or jelly or plain butter, cream etc.. IMG_1885I had some Blackberry Chipotle Jam  for a bit of a POP!

Now I’ll leave the Tea selection up to you (and your additive from the Royal Flask). Don’t forget to raise your pinky when you hoist your teacup.
