Bacon and eggs pasta, AKA spaghetti carbonara

A popular dish in many forms and interpretations with different types of pasta. The basic ingredient bacon (or pork belly)  with eggs.  AKA spaghetti carbonara, ETC.

lo mein

inspired by you tube, Ready , Jet, Cook, Jet Tila, an adaption of recipe, Food Network

noodle time….semolina… Bob’s Red Mill recipe, fine noodle attachment on the pasta machine.

…….. or use store bough FRESH noodle

prep up ingredients….. from what I have on hand… here I have fresh harvested kale for greens , carrot matchsticks, sliced onions, ginger, garlic, hot pepper, sauce mixture with cornstarch , shrimp paste, boiled noodle

saute the onion…..

add in the carrot………….

cook till carrot tender… add the rest of ingredients…then the sauce, toss…

shrimp stir fry

A few ingredients for a meal, frozen shrimp available and some veggies with noodles from a soup kit, less the seasoning package. You can get an idea of cooking times from the time date stamps on the pictures.

Start with onions and oil

stir and fry , add a bit of water or stock if necessary, adjust seasonings

add the frozen shrimp, stir and fry till shrimp are cooked

Add the noodle, I had the noodle packet frozen in the fridge, gave it a couple of seconds in the microwave than added to the mix

finished the cooking process with some dark soy sauce

soups

Several drafts to publish of previous cooking fall under the category of soup so here they are in one posting. A vegetable fresh soup is similar in prep to a salad. Even with the hot weather it seems that a bowl of soup has a cooling effect.

Veggie broth with porcupine meatballs

The porcupine meatballs was from a recipe originally with a sweet tomato sauce.

Not too many ingredients in the meatballs let the flavor of the meat be present.

  • 1 lb. meat (I used pork for this recipe).
  • 3/4 cup jasmine rice
  • 1 egg
  • 3 green onion minced
  • 1 tsp. fresh garlic
  • 1 tsp. salt
  • 1/4 tsp celery seed
  • 1/2 tsp. coriander seeds

Minced up the meat and additives in a food processor, I gave the rice a quick buzz to break into smaller pieces. Jasmine rice not available. The minced meatball mix  was refrigerated as I prepare some vegetable broth.

Using a scooper, it’s easy to make the meatballs.

Plate up hot broth, meatballs, thin cut veggies and noodle.

Soba beef noodle slurp

Over the top here , a quick dish, the spicyness and the noodle gives way to slurping this dish. Perhaps I gave a bit too much shrimp paste, but it didn’t bother me. If you didn’t  have the fish sauce soy and hoisin sauce ingredients it could have been south of the border flair. The fish flavor and the spicyness gave way to the texture of the beef. I could have bumped up the cabbage, it disappeared into the dish, and maybe left out the beef. But no doubt a very concentrated fish and spicy flavor with the beef in the background. The more I look at Asian recipes, the less I follow them! Loosey followed from https://therealcookingmaggie.com/2017/12/05/on-take-out-noodles-at-home/  who credited Bon appetite for the recipe.

We are prepped up for this dish, cabbage, green onion,sauce, beef, ginger root, garlic and a spot of haberno paste.

About 7 ounces of the soba noodles boiled , it only took  a few minutes, drain and put in cold water.

Sauté the cabbage , in this case some Napa cabbage, several minutes till it picks up some color.

Reserve the cabbage and mix in with drained cold noodles.

Turn in the beef to the fry pan now, undisturbed, till it picks up brown color …..

Add in the onion ginger , garlic and hot pepper. Cook several minutes, till onion wilts…

 Add in the noodle, cabbage mixture to pan.. Stir…

Add the sauce…..

Heat through, to meld ingredients …

Plate and garnish with some additional scallions, getting close to the bowl with fork or chopsticks and slurping up the noodle to me adds to the flavor. The color of the soba noodle , with it’s buckwheat component, gives this dish an eyefull for a savoury appeal. Though I might tone  down the fishy-ness, I enjoy the result of this dish.

Noodle with shrimp

A simple dish maybe complicated by the fact that I made my own noodle. But a quick and easy meal none the less.

Boil the required amount of noodle, here I used an semolina and egg recipe.

The frozen shrimps were defrosted in water, a bit of chopped lettuce, mushroom and broccoli prepped. the sauce was a throw together compilation of minced garlic, ginger hoi sin , soy , and fish sauce, water, oil, shrimp sauce, sugar and rice vinegar in amounts to balance out the flavor and viscosity to your preference. A spot of habernao paste for heat.

Start by panning the noodle with a bit of oil over high heat, add the veggies, stir fry several minutes. now add the sauce to coat and cook and stir, adding a bit  shrimp water to keep things liquid without burning. Add  the shrimp and continue cooking, adding small amounts of water if necessary, keep things moving. Flame off let sit a couple of minutes and plate.

I leave the shells and tails on the shrimp for texture of the crunch.

Soup, yellow noodle, chicken

This is what I get for watching to many periscopes of traveling in Hong Kong , shops, markets, crammed along the streets , fast service at it’s best. Food from A to Z. Appetising !

Some chicken scraps tenders  from chicken breast that were trimmed for another use, some leftover mushrooms, in one small pot, a smidgen of duck fat, water, hot pepper pastes, diced white onion, ginger garlic paste, simmered with salt and pepper to taste. Later,  add the yellow noodle, simmer and drain using some of the concentrated broth as a base in a soup bowl. Spoon some the chicken mixture into the bowl.

In a stock pot,  a collection of vegetable trimmings accumulated over time added water to cover, simmer to render a vegetable broth.

Ladle the vegetable stock to fill the soup  bowl, garnish with the green onion.

fried chicken lasagne

Something like chicken and noodles or pasta was in my mind to cook, with gravy, so…….

The  chicken cutlets were used to make a lasagne with them.

I’m pretty much at a loss as to what to do with chicken breast.

I would rather have thighs and legs, but a good cook will make the best of what he/she has available.

Usually most packaged chicken breast now a days are very large and thick.

These I sliced horizontally to thin pieces rather than pound them.

I was able to get up to three fillets from a single breast.

Flour mixed with salt and pepper and spent grains was used to coat the breast and then fried in a small amount of oil  as necessary.

Place on a paper towel ready for assembly.

IMG_4103Chopped brocolli, grated cheese, a combo of parmigiana and Romano was used.

Not shown was gravy that I made from the drippings in the fry pan that was used to fry the chicken.

The pre-fab  lasagne noodles were on the shelve, I was going to make fresh pasta wide noodles but these would speed up the process.

They remind me of the corrugated fiberglass panels that you get (or used to get) from the home supply center.

They are thin gauge and don’t require cooking.

The instructions call for covering the dish with foil and bake at about 350-375 degrees then uncovering the dish and continue baking.

Water was added to the pan because the dish was dry and returned to bake again.

IMG_4113The next time I would used regular lasagne noodles or make my own, the noodles used here are very thin.

Lasagne is always good leftover and provided several meals.

All n’ all, a good use for chicken breast.

Other possibilities would be cubing the breast and combining with elbow macaroni and the broccoli and cheese with gravy and bake in a casserole.
