Apple Squares

A pie that turned into a bunch of squares. I was going to go for a pie but decided to spread the whole thing on to a sheet pan. I followed the dough recipe from the Cuisinart food processor by mixing the dough as directed and before it actually comes together, placing it plastic bags and squeezing it to a disk , then refrigerate for an hour. Butter was the fat utilized.

The apples were then prepped with fresh grated cinnamon, all spice,and nutmeg with both shaved solid brown sugar and granulated brown sugar. (and a touch of grated ginger root). To provide some structure bread crumbs were added also.

The dough rolled out very easy both top and bottom.

Getting close to peak foliage, fresh produce available in the city farmers market, coffee and donuts/baked goods  available  for breakfast while you shop on a cool, quickly warming morning.

Sunday Drive

The weather isn’t really cold yet.

Apple picking IMHO is better done in sweater weather, but, if the orchids call, fresh pressed cider to confirm the beginning of fall is flowing.

A Rhode trip to the northern part of the state. The foliage is just barely starting to turn not ready for the hard core leaf peepers yet.

If the orchid also has bakery treats, then all the better for the family sweet tooth(s).

Not only do you have your choice of apples, but your choice of the many orchids that have apples/fruits available.

I had a taste of the apple strudel, very flaky.

The best apple cider taste, full body and mouth feel, deep red brown color.

As the saying goes, once you taste this cider you’ll have a standard to judge all other ciders.

Puff Pastry ;Pate a Choux

Watching Jacque Pepin on TV , it was time to try Pate a Choux, it looks so simple and I wan’t sure if I had tried it before many years ago. So… It is simple and easy. I will have to make this again. The results are great and flavorful. The recipe is easy to look up and I won’t repeat it here.

The results, stuffed with home made raspberry jam piped inside and topped with cocoa nibs for a touch of chocolate.

Cranberry Wheat Coffee Buns

For a different type of pastry, try wheat.

Modified from Cinnamon Pecan Coffee Ring, Hodgson Mills

prepare 1/2 recipe of dough (or full recipe if preferred)coffebuns1

  roll out the dough in a rectangle and spread with butter, brown sugar, dust with cinnamon and sprinkle with course ground all spice and some grated unsweetened chocolate. Spread out some unsweetened cranberries (cook and mashed cranberries, cooled). Roll up dough and slice into rolls, place on cookie sheet and bake at 425 degrees till done. Serve with coffee.
