IN THE GARDEN AND OTHER PICS

THIS YEAR AS WITH THE PAST , TOMATOES ARE BEING GROWN. 2 VARIETIES , MONTESINO F1 AND SAKURA F1 FROM HIGH MOWING ORGANIC SEEDS . TOTAL OF 6 PLANTS AND THIS YEAR WITH PVC TRELLIS. SOIL BASED. STARTED INDOORS

THE MONTESINO ARE SANTA TYPE RED GRAPE TOMATO FOR FRESH EATING. HIGH YIELDS OF 1/2 OZ FRUITS IN UNIFORMLY RIPE TRUSSES. (LOOK LIKE MINIATURE ROMAS) NEW VARIETY THIS YEAR.

SAKURAS ARE FRUITS OF .5 TO .8 OUNCES ARE FLAVORFUL, BRIGHT AND CRACK RESISTANT TO SOME ROOT KNOT NEMATODE. A REPEAT FROM LAST YEAR.

SOME SCRAP PVC TUBING, WEED BLOCK FABRIC AND SOME BRICKS LYING ABOUT MADE THE TOMATO GARDEN IN THE YARD WHERE IT GETS SUN FOR ALL OF THE DAY
TRELLIS IS ABOUT 7 FEET IN HEIGHT, HAD TO ADD SOME STAKED OUT RIGGING TO PREVENTING IT FROM FALLING OVER.NOTE THE DATE TIME STAMP FOR GROWTH. ALSO I TRIM THE SUCKERS FOR MORE STRAIGHT UP GROWTH
SOME HEAVY COTTON STRING TIED TO THE TOP FOR THE PLANTS NOT CLOSE TO THE PVC.
BRIGHT RED COLOR AND FLAVOR TO MATCH
YIELD OF THIS DAY
SALAD TIME ! THIS IS WHY I DON’T GO WITH STORE BOUGHT TOMATOES ! ALSO FRESH BREAD PAN BUTTER FRIED CROUTONS ATE THE WAY TO GO!
EXCELLENT TOMATOES JUST COOKED IN A SKILLET ! WITH SHRIMP, GARLIC, ONION, KALE, AND COUSCOUS, EASY AND FAST ! YES I’M IN THE SHELLS AND TAILS ON CAMP WHEN IT COMES TO SHRIMP , THE SHELLS ENHANCE THE FLAVOR IMO.
TWICE A WEEK NUTRIENT REGIMENT
SOME OF THE LOCAL WILDLIFE, AND YES THE GARDEN TOAD ALSO MADE AN APPEARANCE
STROLLING THE VILLAGE

Back of the house, hydroponic update

A sunny warm beginning to October, usually cooler in the early hours now, but not that crisp colder fall weather yet.

The DWC hydroponic has produced some greens , flowering brassicas and tat soi , the tomatoes have produced grape like clusters and with the beginning of cool weather pinching back any new growth. A clear type covering to the system in consideration to extend the growing season before it’s brought indoors. The outside limit will be the temperature of course anything near freezing the DWC will moved indoors. More greens should be started indoors.


For all you hydroponic geeks out there, I usually keep the PPM nutrient level now to about 900 to 1200, at the most bi weekly nutrient flush saponin.

An interesting salad

This recipe was a re definition of a salad.

Close  to the original recipe,  very filling for a salad that I had about 1/2 of the total amount.

Nuts are said to be a superfood, but I won’t profess about what you (should) eat,  the decision is up to you.

Now I’m open to a lot of grains, bread, couscous, barley, so this looked like an interesting combination. Now those of you either that have a nut allergy or turned off by a meal with no meat, yes this recipe could be modified from the original but I think that would lose something in the translation.

Being used to the usual greens and tomato type salad, with an oil and vinegar type dressing,  this is a pleasant diversion. Little if any modification to the recipe. Other than sesame oil double and skip the olive oil in the dressing, and some chopped ginger added to the main mix, ( I would taste and bring up the level of ginger in the dressing). The crunch of the red cabbage and the nuttiness of the dressing, on a bed of grains is satifiying. 


 I use double black soy sauce for the dressing. Melt the peanut butter and honey in a microwave safe bowl for about 30 seconds. Stir and finish the dressing and adjust to taste.

I resisted to add any heat to this recipe!

Smoked tabouleh chicken salad

What started as a grille setup to smoke some jalapeño  peppers ended  up as a smoky salad combination for some bulgar wheat and chicken thighs with radicchio and bok choi.

After I finished smoking the jalapenos two chicken thighs were lowered into the smoker about midway from the top grate to the charcoal level. On the top grate some bok choi leaves and two quartered pieces of radicchio were placed and the smoking began with some mesquite pellets added to the charcoal. Meanwhile a box of tabouleh mix (wheat salad) was prepared. As I like bulgar wheat this is the only product I could find at the superstore that is bulgar wheat sold under the Near East brand. As they have couscous in many styles, bulgar wheat is not readily available alone by name.Once the chicken was sufficiently cooked and the radicchio and bok choi was wilted  and smoked they were cut to salad size. Reserving the bok choi leaves. The whites of the bok choi was still crunchy and sliced.

Added to the mix was chopped tomato, and cucumber. The leaves of the bok choi are spread on the serving plate, then the rest of the chopped mixture added.

Now top with the tabouleh and sliced chicken, also feta cheese was added as garnish.

A different taste with a smoky blend of ingredients.

The salad that sticks to your ribs

A hearty meal is know by the phrase “stick to you ribs”, inferring  that a meal will stay with you after consumption and fill you up not wanting more for quite some time. (Just in case that phrase is new to you).

I actually had ribs with this salad, incorporating salads into your menu need not be boring, serve as a side dish once and a while to replace the starch component, pasta, potatoe etc. 

The ribs come as a leftover from a celebratory meal, dry rubbed and slow roasted over charcoal and mesquite pellets. A rite of summer, learning that BBQ the day before and then high heat grilling briefly the day of the meal is the best way to go time wise. Not all in the family goes for the ribs, (or chicken) like this so left overs are available. Even though I like the spicy fire finish of the BBQ sauce, two ribs sufficed. 

I can’t take credit for the salad , on warm days,  heating the kitchen is a factor in planning meals so Diane made the salad. I mearly added the ribs and BBQ sauce . (Recipe will be posted later.)


One of the few times I utilized bottled dressing , Vadalia onion .

Roasted Chicken Thigh with Thai Salad

Time on the grille this weekend, soy sauce based several hour marinade* chicken thighs, slow roasted.

Parsnips, elephant garlic, cauliflower, not  shown, leeks which was the best with the crispy outer leaves and tender center.

now a weeknight meal , some of the sliced chicken on bread, along with greens and salad.

The baking of bread continues of course.

I made some additional peanut sauce with some substitutions and an addition, that is hot red pepper flakes !

It made it on the thick side and can be used as a dipping sauce.

It’s a change to incorporate nuts and coconut into my daily diet, IMO nuts, (peanuts, walnuts, etc. including peanut butter) is a super food.

 You can tell by the price of walnuts , cashews etc.
