Shrimp with sausage/onion roll ups

There happened to be a few small sausage patties from a previous use in the freezer. A quick frying pan meal followed when combined with frozen shrimp.

Brown the sausage patties, remove from skillet, dice, add chopped onion, saute several minutes add oil if necessary, add frozen shrimp, cook, re introduce the sausage then de glaze with wine. Microwave the flour tortillas several minutes till soft and pliable.

I’m not shy about shrimp, I eat tails, shells and all……

Potatoe skins

An  appetizer, pub, bar, resturant or on your own table.  Several potatoes, scrubbed, and cut . Under the broiler till browned and finished to your liking then add some toppings. Cheese being most popular.

Green pepper and onion pizza

With the temperatures starting to cool off , running the oven is more bearable.

Green peppers from the garden along with onion,basil, garlic, salt and pepper and a bit of Parmesan.

Dough is a Hodgson  Mill wheat  flour poolish with added white flour.

Roasted eggplant with veggies

What’s the easier way to prepare eggplant, other than grilling it ? just bake it !

Veggies prepped , place on a parchment lined sheet pan… eggplant, sliced, green peppers, julienne carrot and turmeric, sweet onions, dried tomato, salt and pepper. Toss  the veggies with olive oil, and brush the sliced, prepped (salted, pressed and rinsed) eggplant with olive oil.

marinated tangy chicken thighs with pearl onions and roasted potatoes

defrosted 3 chicken thighs ,  since there was some  plain yogurt in the fridge, placed some in a small bowl and added curry powder, hot pepper flakes, salt and pepper  along with so peeled pearl onions and chopped garlic. Now placed in  a quart baggie and left to marinate several hours.

Nothing fancy for the potatoes, sliced, and a bit of melted butter with herbs , in this case fennel with a bit of salt and pepper are mixed to coat potatoes , placed in a shallow pan and placed under a medium broiler or spaced far enough from the flames to prevent burning before completed cooking.

After the marination of the thighs, place the contents in a shallow  enough pan to space out the chicken and the onions and broil, again sufficiently spaced from the broiler to cook without burning, about 7-10 minutes per side.
