Egg and sausage

A food processor makes a quick task of making sausage meat, a bit of pork diced to facilitate chopping then add spices of what you like. I added some bacon for the fat content and other  spices and herbs. Stored in a plastic bag refrigerated at least overnight gives me fresh sausage meat to use in recipes or alone as a patty.

stuffed peppers

a recipe for stuffed peppers

similar to stuffed peppers but with rice.

in a large heat proof dish place 2 cups of rice.

add 4 cups of water, by the way this is plain white rice, nothing fancy.

place the rice in the microwave, covered, the settings may vary, this microwave oven can store two cooking power levels, the first setting  about 15 minutes full power, to boil the rice and about 15 minutes at power level 6, for the second setting, simmering. Once they are programmed in just start and 30 minutes later the rice is done. Actually it’s  better to let it sit about 10 minutes after finishing.

cut and core the peppers, save the tops.

IMG_1939 for this stuffing, I chose sausage for the meat, prepared in the microwave.

to the sausage, add onions, garlic and seasonings. Sauté a bit to cook.

place the tops on the peppers.

bake till heated through, serve.

a lot of different ingredients can be used for stuffing peppers. This is our most common mix that we prepare.

Looking forward to spring

One of the gifts I received for Christmas was a Chia herb garden. So far I have had good results with it. I was skeptical at first, the instructions called for the seeds to be spread on the surface of the growing medium with out cover, other than a Baggie to give them a greenhouse effect, but they sprouted and rooted. Time now to transfer to a larger pot. The sage was wintered over indoors and really grew well, with the oregano that was outdoors last year. The oregano did not do so well. Deciding on what other seeds to start for the garden.
