Chicken with wine
Catching up on some recent meals to post.
An easy recipe for a classic way to prepare chicken. One of the many adaptations of coq au vin. I won’t post the recipe as there are so many variations. Basically a braised chicken with wine.
Quick bowl of soup
Chicken broth, Chicken, steamed veggies, homemade noodles , season as you like.(Chili paste) Top with fried egg.
3 bean chili with smoked chicken
It started out as a quick search on the Instant Pot app for chili, Have plenty of dried beans in stock, a quick pressure cooker meal means I didn’t have a long soaking and boiling process ahead for a meal within an hour. I found a recipe for a 3 bean chili jar recipe. Remember when the jar recipes were all the rage for gifts ! Still easy to do for your own meal kits.
Pinto, white and black beans, like maybe a 1/4 cup each ,a can of chopped tomatoes, some tomato paste and a bit over leftover condensed tomato soup. The spice list was long, cumin seeds, coriander, dried hot peppers just to name a few. Chopped onions and garlic, celery and carrot to round out the flavor and a toss of frozen corn . Saute as usual add all else. Top off with veggie stock. Seal, set and be back later.

start the plate with a layer of smoked chicken thighs

add the 3 bean chili…

top with shredded cheese and chips,

a glass of dark home brew, next time a real light or a lime hard seltzer would be better fro contrast, or possibly a fruit shandy . The chili and the smoked chicken was fantastic.
chicken Biryani
While we have many spices and ingredients available, I though I would try out this packaged mix for Chicken Briyani. Besides as I season usually free hand, I am curious to taste the blend of this mix.

READY ! those red balls are frozen peeled tomatoes from the garden this year, The chicken is frozen.

Simple enough ? I’m substituting peanuts for cashews. No raisins.

Mix the seasonings with the yogurt, sloppily a bit.

Heat oil…

cooking the onions….

Add the rest of the ingredients and water….

mix …

cover….

Simmer 10 minutes

prepare the rice …

chop peanuts

Add rice to chicken mixture…

Melt the butter….

drizzle the butter (or ghee) over the mixture add the nuts.

Cover and cook 15 minutes

SERVE !

I like the flovor, yes, spicy like I would make it . Now I would replicate the spice mixture from what I have on hand.
Thai spice paste
- 1/2 Teaspoon cumin (ground/seed)
- 1 Teaspoon salt
- 2 Teaspoon pepper (triple blend black,white, Szechuan)
- 2 Teaspoon red pepper (dried hot red pepper)
- 1 Teaspoon lemongrass (diced)
- 2 Tablespoon garlic (minced/granulated)
- 2 Tablespoon ginger (minced/ dried)
- 2 Tablespoon coconut
- 1 Tablespoon sugar (palm or unprocessed)
the above is the basic ingredients , some were (substituted) and the measured amounts can vary.
Basically all ingredients minced by the food processor into a paste.
Stored in a mason jar for use, marinade and seasonings.

Several drafts to publish of previous cooking fall under the category of soup so here they are in one posting. A vegetable fresh soup is similar in prep to a salad. Even with the hot weather it seems that a bowl of soup has a cooling effect.
Veggie broth with porcupine meatballs
The porcupine meatballs was from a recipe originally with a sweet tomato sauce.
Not too many ingredients in the meatballs let the flavor of the meat be present.
- 1 lb. meat (I used pork for this recipe).
- 3/4 cup jasmine rice
- 1 egg
- 3 green onion minced
- 1 tsp. fresh garlic
- 1 tsp. salt
- 1/4 tsp celery seed
- 1/2 tsp. coriander seeds
Minced up the meat and additives in a food processor, I gave the rice a quick buzz to break into smaller pieces. Jasmine rice not available. The minced meatball mix was refrigerated as I prepare some vegetable broth.
Using a scooper, it’s easy to make the meatballs.
Broth to the simmer, with the meatballs till cooked
Plate up hot broth, meatballs, thin cut veggies and noodle.

Sausage stuffing
A small recipe, ingredients and quantities by eye.
Course diced pork
Bacon
Bacon fat
Seasonings of choice
green onion
Garlic
Combine the above in a food processor and with plastic wrap, roll and tie into sausages. Refrigerate at least overnight.
Diced bread crumbs
Diced celery and onion
Seasonings, Bell’s or other
Salt and pepper
Stock or water
Prepare the traditional stuffing recipe, saute the onion and celery with butter, the bread cubes were placed in an oven beforehand to dry out somewhat.
Mix and add enough stock to dampen the mixture. Add the sausage meat.
Place in a buttered pan and bake at about 425 degrees Fahrenheit.
Good as a side dish or small meal with salad.
Beef ribs return
A pick from the supercenter meat case, beef ribs. This recipe is a slow cook method, 300 degrees for 4 hours at least.
The cooking sauce was a base of reduced soy sauce, 5 star anise, ginger , garlic, allspice , sugar , balsamic and acouple of drops of liquid smoke.
One of the new seasonings from the market shelve, a bit of sweetness along with pepper . Do you taste your spices and herbs before adding them to a recipe? Manufactures have gotten into the fresh ground game now with an adjustable grinder cap.
A recent “new ” old oven now in use, a combo convection/ microwave unit. Slow cooking setting give you 4 hours at 300degrees. Thanks to the Internet and manufacturers website one is able to download the users manual for this oven.
