a hearty beefy soup, wit the addition of a thickening agent, a stew

a beef soup/stew for the instant pot

prep the following:

egg noodle semolina recipe, roll out and cut into good size noodle squares, set aside

prep veggies, onion, carrot celery, a pinch of oregano, paprika, parsley and thyme, a bit of tomato paste and a few garlic cloves minced

leaf a few brussell sprouts, slice mushrooms

slice and cube beef season with salt, pepper and marinate if possible

set instant pot to saute, high and let come to temp

with a bit of oil, brown beef, remove from pot

add to pot onion, celery and carrot mixture with your seasonings

cook till wilted and soft

add sprout leaves, mushrooms and tomato paste to pot

mix and cook several minutes

return beef to pot, with broth top to fill line of pot.

cover, reset and set to stew soup setting about 15 minutes low pressure

at end of cycle release pressure , remove cover, reset to saute high, add noddle squares when the pot begins to boil

cook the noodle squares till tender, reset and set to keep warm setting

add more broth if necessary.

serve with crusty bread









ox tail stew


Ox tail , a different cut of meat to consider for stew or soup in place of stew beef. I looked up recipes both for oxtail soup and stew . Most are similar in content and preparation  and usually just the gravy or broth thickness will determine whether it’s stew or soup.  I divided the ox tail pieces so I could use them for two recipes.

Flour the pieces of meat and brown well . The flour can be seasoned. Add a small amount of salt and pepper and other seasonings as desired.



In a heavy pot, brown the floured ox tails in oil on all sides.






Gather veggies to complete the stew.



P rep the veggies and saute


A small amount of broth added to the pot after the veggies are removed.


Instead of wine, I had some frozen grapes that were used to make wine. actually a pyment.


The broth was strained.


Now, all the ingredients were placed in a crock pot.


This recipe was made to be served later, after cooking in the crock pot for several hours, the stew was cooled and refrigerated over night.


Remove the congealed fat, pull out the oxtails and de-bone.

I save the congealed fat in the fridge for sauteing in other recipes.


Add the ox tail meat back into the stew, adjust seasonings and both thickness as necessary.


I containerized the stew and saved in  the freezer for later meals.


Later in the week, prepared as a meal. Some peppers and mushrooms added.


A hearty, tasty stew.

cooked on a grill with a charcoal starter

It was hot and humid tonight so…..
place a grate over a charcoal starter with white-hot coals
and flame brown seasoned rubbed beef cubes, cut big enough so they
won’t fall through a grill grate, about 2 minutes. do in batches if necessary.
place in a pan with olive oil, butter, sliced garlic, sliced onions.
and seasoning to taste, cumin, ground cloves, allspice etc.
return pan over the charcoal starter and saute the contents.
depending how you can set up your charcoal starter
in your BBQ grille do so carefully, the pan will be balanced on top
of the charcoal starter, acting like a burner, with a grate between the pan
and the top of the charcoal starter. Add your choice of tomatoes, with liquid
(1 can stewed tomatoes).heat through, add some kidney beans and heat through
10 or 15 minutes. Adjust the seasonings to taste (added more) and hot sauce.
heat through about 10 minutes more and taste to check seasonings.
