beef soup with noodle squares

a few pictures

a hearty beefy soup, wit the addition of a thickening agent, a stew

a beef soup/stew for the instant pot

prep the following:

egg noodle semolina recipe, roll out and cut into good size noodle squares, set aside

prep veggies, onion, carrot celery, a pinch of oregano, paprika, parsley and thyme, a bit of tomato paste and a few garlic cloves minced

leaf a few brussell sprouts, slice mushrooms

slice and cube beef season with salt, pepper and marinate if possible

set instant pot to saute, high and let come to temp

with a bit of oil, brown beef, remove from pot

add to pot onion, celery and carrot mixture with your seasonings

cook till wilted and soft

add sprout leaves, mushrooms and tomato paste to pot

mix and cook several minutes

return beef to pot, with broth top to fill line of pot.

cover, reset and set to stew soup setting about 15 minutes low pressure

at end of cycle release pressure , remove cover, reset to saute high, add noddle squares when the pot begins to boil

cook the noodle squares till tender, reset and set to keep warm setting

add more broth if necessary.

serve with crusty bread

broiled tomato with couscous

Fresh tomatoes from the yard have been a staple here this summer and  fall , I’ll try to preserve some for the winter but will miss them.

Basically short on pictures here but you get the idea, a simple meal in a sense you have pasta and sauce deconstructed . I seasoned towards Italian, oregano, parsley, dried hot pepper flakes and thyme etc. 2 variety of tomatoes. Smashed garlic and sliced onions a bit of salt and pepper blend.

Crank up the broiler, get the cast iron, you’ll want to blacken the tomato mixture with a bit of a char..   toss once or twice….

Braised boneless pork ribs with barley and mung beans

A tasty meal, brown the pork ribs throughly in oil, add sliced white onion, grated turmeric root, several small fresh  tomato and ground pepper(s) a pinch of curry  spices. Also added some oregano, and thyme.

When everything is fragrant, and the onion wilted, add hot stock to the pan, simmer covered. Add additional hot stock during the process if necessary. Just before the pork is tender, again,  bring up the level of the liquid, add the barley and mung bean (a dried packaged mix), cover simmer 10 minutes, move from the flame, keep covered for about 10 more minutes. Serve. The barley tender, the mung bean firm.

What was left in the pan after serving………

polenta biscuits, lemon and thyme

Here’s a recipe I posted for archive  and I’ve made this several times .The polenta recipes started when I had some corn flour/ polenta flour in the pantry. A crispy, what I term semi sweet cookie type biscotti biscuit, and of course this type of biscuit good with coffe , tea or other sipping drink.

spicy chicken tomato soup

The last time I made my vegetable stock, there was some hot pepper pieces in there with the vegetable remnants, so now everything I use the stock for has a spicy flavor, not that I mind.

Not a lot of pictures here.

Started with a chicken thigh browned in bacon fat, removed from pan and added the usual characters, onion, several mushrooms prepared garlic and simmered a bit. Add in some whole tomatoes previously frozen from the farmers market. A bit of tomato paste in the mix also.

Chop the thigh , with the skin and return to the pot with the bone and an ample  amount of vegetable broth. Shredded carrot, dried parsley, thyme, a smidgen of ginger. A quarter head  of red cabbage chopped fine added to the pan, what else ?

I sure that someone could come up with a Spanish sounding name for this spicy tomato soup, sopa de tomate picante as the google translate says.

BBQ ll

a day to sit back an fire up the smoker , this time some beef ribs. not a large amount, 2 short sections that easily fit on the grille/smoker.

First here is the rub of 2016 ran out of last years batch BBQing the cornish hen.

IMG_0698I used a 4 pepper blend , thyme vs oregano and dried ancho pepper

IMG_0700Apply the rub, and smoke. these only took about 2 hours, at about 325.

IMG_0701The result a bit overdone, but a good bark and hot flavor, serve with a dipping sauce, a hot BBq sauce is my preference. Also pork ribs are better suited for this as they have more meat on the bone if using country style ribs.

stuffing for breakfast ?

maybe a new series,  “Keyboard Meals” or “Opening the Kitchen”

a recent email, news letter, from Bon Appetite  cooking without recipes, inspired this dish for first meal of the day.

In your saute pan, which may be a permanent fixture on your stove top,  add diced kale  stems, some garlic and the seasonings of your choice. (Himalayan Sea salt and  pepper medley flakes)

I add butter and/or oil, once the mixture is fragrant, add torn bread, brown and then the kale leaves rough chop.

Plate and garnish with grated Parmesan and dried thyme.

brew up the coffee, and log on ! watch the sun rise, or go to your studio;

YES CHEF !

The original recipe calling for Tempe sounds good I’ll go in that direction soon, but for now, there’s enough on my plate !

Shrimp and Barley

Prepare barley as package directs, usually about a 2 to one ratio of barley/liquid (water, stock, etc.)

Stir fry shrimp in olive oil, season with thyme, or the herb/spice of you choice.

Simple pizza

a few basic ingredients for a quick snack….IMG_9342Onion, garlic, basil, thyme, goat cheese, Parmesan. A light sprinkle of dried hot red peppers, salt and pepper and  a drizzle of olive oil. Basic but good.
