no knead bread

a bread recipe that involves minimal labor with great results!

adapted form Garden Fork YouTube posting

I need bread I just didn’t knead this loaf !

measure by weight

430 grams flour

9 grams salt

1/2 teaspoon yeast ~1 gram

mix the above ingredients

add  245  345 grams water

with a spatula mix until all is incorporated  , dough will be shaggy, DO NOT KNEAD

cover as is and let rise about an hour or two or more depending on room temperature or in oven with light on to prove.

line a bowl with baking paper (parchment)

carefully turn out the dough to a floured surface, fold top , bottom , and sides and gently tuck into a ball.

carefully transfer dough to the parchment lined bowl smooth side (top) up.

let rise again about an hour or as necessary.

preheat oven to 425 or better with a covered crock or casserole in oven.

When at 425 remove crock, carefully lift by the parchment paper, the dough and place in heated cock, cover with the heated lid, return to oven.

bake for about 20 minutes

remove lid and bake for about 20 minutes more at a lower temp, about 350 degrees.

remove from oven , lift by parchment and let cool, remove baking paper.

UPDATE: I make this recipe often as it’s easy and less labor than other recipes. Now I usually let rise in a crock, covered bowl etc. Then, turn out dough to a non stick bread pan, let rise again and bake. Super Simple ! You could actually let it rise in the baking pan itself !

Back of the house, hydroponic update

A sunny warm beginning to October, usually cooler in the early hours now, but not that crisp colder fall weather yet.

The DWC hydroponic has produced some greens , flowering brassicas and tat soi , the tomatoes have produced grape like clusters and with the beginning of cool weather pinching back any new growth. A clear type covering to the system in consideration to extend the growing season before it’s brought indoors. The outside limit will be the temperature of course anything near freezing the DWC will moved indoors. More greens should be started indoors.


For all you hydroponic geeks out there, I usually keep the PPM nutrient level now to about 900 to 1200, at the most bi weekly nutrient flush saponin.

Light supper

Stir fry broccoli, green onions, a splash of wine vinegar, rice wine, scrambled egg with toast and shrimp paste.

Toasted sesame seeds garnish.

A sunny Sunday breakfast

Whole wheat, white spent grain toast

Poached egg

Cubed chicken (leftovers)

Brussels sprout greens

Orange juice (one large orange squeezed)

Coffee, (Sumatra )

Sour cream 

Dried hot red pepper

Cracked black pepper


An effort at a balanced breakfast

Considered a bechamel sauce but opted for sour cream.

Enjoy the last day of the weekend!

Ground Beef with Egg and Cheese

  Toasted  bread , Red leaf lettuce, beef chuck, ground, with a bit of bacon fat added, broiled, medium rare about 3 ounces, topped with fried egg, cheddar cheese, and hot sauce on .

Broiled Brussels sprouts. Salt & ground pepper.

Pizza toast

Instead of preparing another batch of dough, making use of bread already baked.

Lightly toasted white bread that has a small addition of spent stout grains, topped with sausage, green peppers, mushrooms, tomatoes and cheese. Of course a sprinkle of dried hot peppers.

The sausage, green peppers and mushrooms were sautéed, added to the toast, broiled and then add tomatoe and cheese, several  seconds under to broiler to finish.

Sprinkle with grated cheese , garnish with basil.
