meatball enchilada

left over meatballs, mind you, a ground chicken blend with sauce already a bit spicy from my heavy hand on the red pepper flakes.  Pasta, noodles, gnocchi  ??  Take two, Wraps ! going towards the Mexican style.

Step one make some white floured tortillas , cook in the trusty cast iron skillet with a touch of oil brushed on. (I won’t bore you with the recipe for flour tortillas, a bit of bacon fat mixed into white flour and water is all it takes)

there is something about having a tortilla (or flatbread) puff up like this, a sign of good luck?

chop or slice the aforementioned meatballs

keep it simple with a few ingredients like shredded mozzarella, finely processed broccoli, meatballs and sauce. 

lay down some sauce, meatballs, broccoli and cheese

roll up, closely nestle in a pan, a bit of oil in the pan before placement

top with sauce, cheese and broccoli, I don,t go wild with the sauce like traditional enchiladas, I like the wraps with a bit of crunch and the ability to be eaten like a wrap.

bake the babies till heated through, cheese melted, crunchy edges, flame them under the broiler if desired.

Breakfast wraps

Basically and scrambled egg in a wrap

Onion, sausage and left over potato sauteed,

IMG_7776drop in a couple of eggs and some seasonings and herbs

IMG_7777Scramble it up and place in a wrap with grated cheese.

IMG_7779Wrap, return to broiler, I like it crispy, garnish with ricotta and fresh fruit.

Lamb wraps

Some shredded lamb, sauteed veggies, leeks etc. served with leaf spinach rolled in a wrap.

Brunch wraps

(Hi there, Happy March First)

a little different spin on tortilla wraps utilizing what ingredients I have on hand.

Sauté.

 

some red beans added and mashed….

set aside  flour tortillas, flour and bit of crisco (don’t cringe), salt and a bit of baking powder, add water, mix and refrigerate while sauting. I didn’t get pictures of making those , for now I’m tethered by the charging cable, low battery, and tyring to blog and photograph on the fly with the wordpress mobile app.
(the radio announcer ,says that only 40 % of people are connected to the internet, in my earphones)
coffee is  java estate pancoer…. light roast….

didn’t preheat the oven , so microwaved 👋 the tortillas

looks like grapefruit will be the fruit addition to the plate.

Wrap it up

Recently I made some beef ribs braised with carrot and onions. For a change, I pureed the carrots. One meal, actually many was made with the rib meat. Here is one of them.
